Green Rice Casserole

Have you ever been to a get together and tried a casserole that you fell in love with and just had to have the recipe for? Well for me this was a recipe that I definitely wanted to have in my repertoire because it is so delicious and complimentary to so many other dishes. I have yet to take it to a function where I have not been asked for the recipe.

Green Rice Casserole 1Trust me, it is just that good! Through the years I have tweaked it to fit my family’s taste by changing the types of soup I use. It originally called for cream of celery but I found that I liked the cream of mushroom much better but feel free to make it your own! This is my go to side dish whenever I have grilled chicken because every time I grill chicken I make my Alabama White BBQ Sauce and let me tell y’all this casserole is so good alongside all of that yumminess!! Green Rice Casserole

Cook Time: 25 minutes

Total Time: 50 minutes

Green Rice Casserole


  • 3 Bags Boil in Bag Rice
  • 16 oz Sour Cream
  • 2 cans Cream of Mushroom Soup
  • 7 oz Can Diced Green Chiles
  • Salt and Pepper to taste
  • 2 C. Shredded Velveeta Cheese
  • 2 C. Mexican Style Cheese


  1. Boil rice according to directions then drain.
  2. Add the soup, sour cream, chiles, salt and pepper to a large mixing bowl and stir until well mixed.
  3. Add the drained rice and mix together well.
  4. In a greased 9X13 container, add half of the rice mixture then sprinkle with one cup of each type of cheese.
  5. On top of the cheese add the remaining half of the rice mixture and spread evenly to cover the cheese then sprinkle the top with the remainder of the cheese.(This is where you can always add more or less cheese depending on your taste)
  6. Put in 400 degree oven for 20-25 minutes or until the cheese is all melted and bubbly.
