Happy Cinco de Mayo with Chicken Jalapeño!

What is Cinco de Mayo? Well, in the United States it’s a celebration of Mexican heritage and culture but in Mexico it’s the celebration of a stronghold by the Mexican military against the French at the Battle of Puebla on May 5, 1862.Chicken jalapeno recipe 3

Even though it was not an end to the war which lasted another 5 years, it was a symbolic win that bolstered the resistance of the Mexican people that eventually led to the withdrawal of France and victory!Chicken jalapeno recipe 6

Now, leave it to us American’s to turn Cinco de Mayo into a day to eat some great Mexican food and drink a good Mexican beer or margarita, but let’s be honest, any day is a good day to do that!Chicken jalapeno recipe 1

Here is one of my family’s favorite Mexican inspired dishes that I’d like to share with you in celebration of Cinco de Mayo.

Chicken Jalapeño Casserole

Prep Time: 1 hour, 10 minutes

Cook Time: 20 minutes

Total Time: 1 hour, 30 minutes

8 - 10 Servings

Chicken Jalapeño Casserole

Ingredients

  • 6 large chicken breasts (Fresh or Frozen)
  • 2- 4.5 oz cans diced green chiles
  • 1 small sweet onion
  • 1- 24 oz sour cream
  • 1Tbs Lawry’s seasoned salt
  • 1 can cheddar cheese soup
  • 1/2 can Rotel
  • 24 corn tortillas
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Boil chicken making sure to add salt to the water (about 1 Tbs.)
  2. Chop chicken into fine pieces (I personally use a food processor to save time but it can be chopped finely with a knife)
  3. Take the chopped chicken and put into large mixing bowl.
  4. Add green chiles, sour cream, finely chopped onion and seasoned salt in with the chicken and mix together well.
  5. Preheat oven to 375 Degrees.
  6. In a saute pan add a small bit of oil and put on medium heat then add the tortillas one at a time for a couple seconds just to make them pliable.
  7. Layer the bottom of the casserole dish with 6 corn tortillas
  8. On top of the tortillas layer ⅓ of the chicken mixture then add ½ cup cheese
  9. Repeat steps 7 and 8 for a total of three layers and end with the tortillas on top
  10. Mix the Rotel with the cheddar cheese soup and pour over the top layer of tortillas then add the last ½ cup cheese
  11. Bake for 15-20 minutes or until cheese is all melted and bubbly and the inside is warmed throughout.
