Chicken and Dumplings, Good for the Soul

Here in Huntsville, Alabama we have experienced some record high temps. Much warmer than what we are accustomed to having this time of the year, that’s for sure!

The cold temps are back though so this recipe could not come at a more perfect time. Chicken and Dumplings are pure southern goodness that warms you from the inside out!  They say chicken soup is good for the soul and I tend to agree. The warm broth that is well seasoned with the flavors of celery, carrots and onions, salt and pepper sipped between the bites of chicken and chewy little puffs of dough.

You just can’t help but be comforted with each and every bite. This recipe is so simple and delicious! Some people make their own dumplings but I like to take a shortcut and use canned biscuits so even if you think you are not a good cook, I promise, even you can make this! Give this simple recipe a try and wow your family!

Chicken and Dumplings, Good for the Soul

Prep Time: 10 minutes

Cook Time: 1 hour, 15 minutes

Yield: 8 Servings

Chicken and Dumplings, Good for the Soul


  • 1 whole Chicken
  • 4 whole peeled carrots
  • 1 whole onion, quartered
  • 3 whole stalks of celery, washed and strings pulled
  • 2 10-count buttermilk biscuits (Do not use the flaky layer or buttery ones)
  • Salt and Pepper to taste


  1. Cover chicken with water and add the veggies, salt and pepper and boil until done. Close to 1 hour and 15 minutes (another reason for leaving the veggies whole so they do not break down)
  2. Once chicken is cooked remove it and the veggies from the broth. Pull chicken off the bones and slice the veggies (the carrots and celery, I discard the onion) add back to the broth or omit altogether if preferred
  3. Take each biscuit and press it down flat in your hand and then pinch of little pieces and add them to the boiling broth until they have all been used
  4. Let everything boil about 10 minutes
  5. Salt and pepper more to taste
  6. Enjoy!
